Sanma In Japan there is a strong connection between food and the seasons. In Japanese literature ‘Sanma’, or ‘Saury fish’ is often used as a symbol of autumn. Just hearing the word ‘Sanma’ makes you think of autumn! Sanma is a long thin fish that migrates with the turn of the seasons. It tastes best when salted and grilled. Add a dash of citrus fruits like Kobosu or Sudachi, or grated Daikon (raddish) and you’ll be in heaven! Many Sanma Matsuri (festivals) are held in Tokyo at this time of year.
